orange pancakes

  • Ingredients

    • 1/2 cup nudie nothing but orange juice with pulp
    • 1/2 cup non dairy milk
    • 1 tsp vanilla extract
    • 1 cup plain all purpose flour
    • 2 tbsp sugar
    • 3 tsp baking powder
    • Pinch of salt

    Toppings

    • Orange marmalade
    • Coconut yoghurt
    • Fresh orange slices + zest
    • Icing sugar
    • Maple syrup
    1. Add the orange juice, milk and vanilla in a bowl. Whisk well.
    2. Add in the remaining dry ingredients and whisk until smooth.
    3. Heat up a frypan on medium heat and grease well with oil.
    4. Add ¼ cup of batter into the pan to form each pancake. Cook for 2-3 minutes until bubbles form and flip then cook on the other side for an additional minute.
    5. Stack the pancakes up onto a plate and decorate as desired. Enjoy.
