citrus apple jelly slice

  • Base

    • 1 cup all-purpose flour
    • ¼ tsp salt
    • 1/4 cup agave syrup
    • 1/3 cup vegan butter, melted

    Filling

    • 1 cup (250mL) full fat chilled coconut cream (from a can, chilled white cream part only and not the liquid)
    • 1½ cups nudie nothing but citrus apple juice
    • ½ cup agave syrup
    • 1 tsp vanilla extract
    • ½ cup cornflour
    • ¼ tsp turmeric
    1. Preheat the oven to 180*C conventional or 160*C fan forced. Grease and line a 20cmx20cm square baking tin and set aside.
    2. Add the flour and salt into a bowl and mix. Add in the agave and butter and mix until well combined.
    3. Pour into the prepared tin and press down to form a densely packed even layer. Bake in the oven for 15 minutes until the edges start to become golden and pull away from the tin.
    4. In the meantime, add all of the filling ingredients into a saucepan and whisk well over high heat. Once the mixture begins to bubble, it’ll thicken quite quickly. Continue to whisk over high heat for another minute.
    5. Pour the filling over the crust and return to the oven to bake for another 15 minutes.
    6. Remove from the oven and allow to cool at room temperature before transferring to the fridge to set for 2 hours or overnight.
    7. Slice into 9 even squares. Enjoy.
