carrot cake waffles

Ingredients:
- 1 cup Nudie carrot crush juice
- 1 tbsp avocado oil
- 1 tbsp maple syrup
- 1 tsp apple cider vinegar
- 1 cup plain all purpose flour
- 3 tsp baking powder
- ½ tsp cinnamon
- 1/8 tsp ground nutmeg
- Pinch of sea salt
Topping:
- Yogurt
- Walnuts or pecans, roughly chopped
- Maple syrup

Add the juice, oil, maple syrup and vinegar into a bowl and whisk well.

Add in the remaining dry ingredients and whisk until just smooth.

Preheat your waffle iron and lightly grease. Once hot, add in your batter and cook until golden and crispy on the outside. Repeat with the remaining batter.

Serve with yogurt, nuts and maple syrup plus any other toppings of your choice.
